A variety of sumptuous dishes are prepared daily by our Chef using fresh, local produce. Whether your preference is Jamaican specialties or your own tailored menu, our Chef will be happy to oblige.
Breakfast
Every morning you will be served freshly brewed Blue Mountain coffee or tea along with a beautiful display of local fruits. You can choose to have traditional American favorites or some Jamaican specialties. Some of our menu options include:
- Eggs Benedict served on an English muffin, homemade potato wedges, and Bacon
- Ackee & saltfish (Jamaican national dish), callaloo, plantain, and Johnny cakes
- Caribbean scrambled eggs, toast, and bacon

- Jerk chicken spring rolls with Jamaican dipping sauce
- Avocado caprese wrap with balsamic vinaigrette
- Warm roasted herbed vegetable and bean salad
Dinner
Homemade soups, salads, and delicious desserts accompany all of our dinners. Here is a sample list of some of the options available from our chef:
- Jamaica’s famous jerk style grilled chicken served with fresh local vegetables, rice, or potato
- Coconut Basa (fresh local fish) – a Chef Leighton specialty dish
- Lobster served with marble potatoes and fresh local vegetables
- Garlic shrimp with basmati rice and fresh local vegetables
- Grilled red snapper tacos with mango salsa
